anyone had any experience with huck bolt rivets in off road trailer construction

You mean hucking the whole trailer or just adding stuff like jerry holders etc

Not come across Huck Bolts but I use Rivnuts for securing fire extinguisher, battery box and similar things that are next to steel or aluminium sheet.

Huck bolts aren't a bolt as such, they are really a rivet.
